Pumpkin Protein Pancakes

These pumpkin protein pancakes have become one of my favorite snacks since they are easy to make, freeze great if needed, and I can easily take them on the go as I am running out to the door to school drop off or a sports game for one of my kiddos.

They are packed with protein, healthy carbs, and yummy fats (when you add American Dream Nut Butter sandwiched in between two of them!  Use code RACHEL161 to save 10%!

What makes them even better is that I make them on a sheet pan so I don't have to stand at the stove flipping pancakes forever!!

Pumpkin Protein Pancakes

Makes approximately 32 pancakes 

Macros for 2 pancakes = 15g carbs, 9g protein, 1g fat 

Ingredients:

  • 180 grams of oats (I used One Degree sprouted rolled oats that are also gluten free but feel free to use whatever you prefer)
  • 120 grams of vanilla protein powder
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 can pumpkin puree (NOT pumpkin pie filling)
  • 2 tablespoons pure maple syrup or sweetener of choice 
  • 1 ¾ cups either liquid egg whites, unsweetened almond milk, or fairlife core power vanilla protein drink (any of these will work it just changes the amount of protein, you can also use a mix of these) 

 

Directions:

Preheat the oven to 350. Line two 13X9 sheet pans with parchment paper. 

In a blender, blend up the oats, protein powder, baking powder, salt, and cinnamon.  Once completely blended add in pumpkin puree and maple syrup.  Blend until all ingredients are combined.  Add in liquid of choice until all blended. 

Once everything is combined, divide the mix evenly onto sheet pans and spread out evenly.  You may need to clip the parchment onto the pan so it doesn't slide around, just make sure to remove these before baking.

Bake for 12-15 minutes or until the pancakes are solid but have a little squish :)  

You can also cook these on the stove top like regular pancakes using an ice cream scoop that is partially filled to get about a ¼ cup of batter per pancake.

 

I like to eat mine sandwiched between American Dream But Butter!
